Maple and Lime-Flavored Cucumber and Peach Relish

  • 1 grated cucumber
  • 4 grated peaches
  • 2 Tbsp maple butter (see recipe below)
  • 2 limes (juice and zest)
  • 1 tsp chili peppers

Maple Butter

  • 1/2 cup softened unsalted butter
  • 1/4 cup pure maple syrup from Canada


Maple and Lime-Flavored Cucumber and Peach Relish

  1. In a bowl, combine one grated cucumber and four grated peaches.
  2. Melt maple butter in juice of two limes and add this mixture to the cucumber and peaches.
  3. Add the zest of 2 limes and the chili peppers. Mix well using a spatula.
  4. Pour everything into a large strainer over a bowl and leave in the fridge for one hour to drain.
  5. Place in a well-sealed container and keep in fridge.

Maple Butter

  1. Place ingredients in the bowl of an electric mixer. Beat on medium until thoroughly combined. Maple butter will keep up to six weeks if stored in an airtight container in the refrigerator.
