Pina Colada Popsicles

  • 2 cups fresh pineapple, chopped
  • 1 cup coconut milk
  • 1 lime, juiced
  • 2 tbsp pure maple syrup from Canada
  • 1 tsp vanilla extract


  1. Add the pineapple, coconut milk, lime juice, maple syrup and vanilla extract to a blender and blend until smooth.
  2. Pour the mixture into a popsicle mould and add popsicle sticks to each popsicle.
  3. Place in the freezer overnight.
  4. To remove the popsicles from the moulds run them under warm water for 30 seconds, then gently tug the popsicle sticks.
