Maple Beets with Microgreens and Goat Cheese

Ingredients

  • 8 beets
  • 4.5 oz fresh goat cheese
  • 2 tablespoons maple syrup (preferably amber syrup for its rich flavour)
  • 3 tablespoons cider vinegar
  • 1/4 cup olive oil
  • Microgreens of your choice

Method

  1. Thinly slice the beets and arrange them on 4 plates.
  2. Crumble the fresh goat cheese over the beets, then drizzle with maple syrup, apple cider vinegar, and extra virgin olive oil.
  3. Season to taste, then pour over beets. Garnish with greens.
