Ingredients
- 1 square puff pastry (or strips of puff pastry)
- 2 tablespoons maple sugar
- 2 tablespoons butter
- 6 pears, peeled, cored and cubed
- 1/2 cup maple syrup (preferably dark syrup for its robust flavour)
- 2 cups whipping cream or ice cream
- 2 tablespoons maple flakes
Method
- Preheat oven to 400 °F.
- Place puff pastry (or strips) on a baking sheet and cut into 1 inch cubes. Cover with a sheet of parchment paper and another baking sheet of the same size as first. Sprinkle with maple sugar.
- Bake in oven for 20 minutes or until golden. Remove from oven and set aside.
- Melt butter in a large frying pan. Add pear cubes and fry for 3 minutes over medium heat. Add maple syrup and caramelize for 2 minutes.
- Remove and set aside.
- Before serving, assemble the verrines by adding puff pastry cubes (or crush puff pastry), maple pear cubes and whipped cream, in that order.
- Garnish each verrine with maple flakes and serve.
